Near-Infrared Spectroscopy (NIRS) is an analytical technique that can be used both in the laboratory and along the food production process to perform qualitative and/or quantitative analysis from raw materials to the finished product. 
This technique is highly versatile and user-friendly, but to fully harness its potential, it is essential to choose appropriate measurement accessories based on the sample type and expected results, as well as to configure the correct signal acquisition parameters. 
Furthermore, an application of NIR spectroscopy combined with artificial intelligence will be demonstrated for monitoring the entire pasta production process, from goods receipt to the finished product.
